Are you heading off to a Memorial Day BBQ this weekend and aren’t quite sure what to bring? Look no further. This spinach salad with strawberries and spiced pecans is not only beautiful, but always a huge hit. It does take a little effort to put together, but it is worth it – trust me.

For spiced pecans:
1 cup pecans
1 egg white
¾ tsp. vanilla
1 cup sugar
1 Tbsp. water
For dressing:
1 cup vegetable oil
1/3 cup cider vinegar
¼ cup sugar
1 Tbsp. poppy seeds
1 tsp. salt
1 tsp. dry mustard
1 tsp. celery seed
2 Tbsp. corn syrup
For salad:
6 cups fresh spinach
2 cups strawberries (1 lg. container – 1 lbs.), sliced
¾ cup red onion, thinly sliced
1 cup fresh mushrooms
To make spiced pecans, beat egg whites until very frothy, but not stiff. Add remaining ingredients, and then add pecans and mix to coat. Spread pecans on baking sheet in a single layer and bake at 200 degrees for 45 minutes, turning every 15 minutes.
Shake together all ingredients to make dressing. Toss salad ingredients together.
Toss salad with dressing and top with pecans just before serving. This recipe serves about six people.
Oh my gosh, this looks absolutely WONDERFUL. And it comes at the perfect time. I am in a bit of a twist with weekend guests coming and I just don’t cook, but don’t want Dan to have the whole burden. I think I can handle this salad, though. Chopping – can do. Baking pecans – can do. Shaking up dressing – can do. I’m set! THANKS!!!

I love this salad but I always meant to ask you why are they called spiced pecans? There is not one spice added to them. They are yummy, I was just wondering.

Mmmmm, I make a very similar recipe but it also includes wedges of Brie (just for a few 1,000 extra calories) sprinkled in the salad.
