Leah will eat anything that comes from a pig. Bacon, pork from the Asian supermarket, ham and her new favorite, spare ribs.
I first made this recipe, from Real Simple magazine, about two months ago. My daughter alone scarfed down three ribs and then asked for more. In fact, we all enjoyed it. For a quick and easy meal, give the Garlic and Oregano Baby Back Ribs a try!
- 3lbs. baby back pork ribs
- 5 garlic cloves, finely chopped
- 2 tablespoons fresh oregano, chopped
- 1 teaspoon cayenne pepper
- 2 teaspoons salt
- 1/4 cup olive oil
Heat oven to 400 degrees. Place the ribs on a foil lined baking sheet in one layer. In a bowl, combine the garlic, oregano, cayenne, salt and oil. Mix well. Cover both sides of the ribs with the garlic oregano mixture, coating evenly.
Roast in the oven for 1 hour, flipping once after 30 minutes. Remove and let rest, covered, for 10 minutes. Makes four servings.

Ohh, looks delicious! I’m definitely going to try that out.
Did you cut up the ribs before or after cooking?
I LOVE ribs but usually end up cooking them all day to get that falling off the bone texture. Mmmm. Ribs.
